We took a drive down to Wailea on the island of Maui because a heavy rain storm was to hit the Northwest part of the island (Kāʻanapali) where we were staying that day. After crawling around on the furthest beach South that was reachable by car, where the last known lava flow occurred from Haleakala in 1792, we drove to the Wailea shopping center.
We were actually looking for the Ruth's Chris there to try their happy hour, however, the Wailea Ruth's Chris didn't open until 5:00 PM and we were starving at 3:00. We stumbled into the Tommy Bahama's store and found that it had an attached restaurant and bar, ...and it was Happy Hour!
Sitting at the bar we met some great folks from Canada (Red Mountain / Okanogan area) and the husband suggested I try the Coconut Cloud. He described it perfectly... "like a boozey piña colada, only smoother and no ice chunks".
I had 2... and 2 was enough! Throughout our trip in Maui, seldom did i feel any of the drinks we consumed, but these had some punch!
Upon arriving home I received an email from Tommy Bahama, (I had signed up for their discount card and bought a shirt just before Happy Hour). Their email had recipes for all of their fabulous drinks.

COCONUT CLOUD MARTINI
Featuring Tommy Bahama Rum®1 part Tommy Bahama White Sand® Rum
1½ parts vanilla vodka
1½ parts coconut rum
½ part Coco Lopez®
Shake 20 times in a cocktail shaker and strain. Garnish with toasted coconut.
